The nutrition is one of the human needs. The ways of preparation, which include the cooking has changed throughout thetimes, it goes from the “pachamanca”, the wood fire up to currently the induction kitchens. Nowadays nevertheless any dishprepared are using some ancestral technics and are well fancied; among these technics we could mention the cooking in thewooden fire, wood oven, the use of ceramic pots or bronze pots.The Imbabura Province is located at the northern part of Ecuador, it is well known for preserving traditions such as cookingtechnics and the use of ancestral utensils for cooking. In some places as Otavalo or Natabuela in special occasions still makethe “pachamanca”. The use of these technics or utensils have permitted to this province be awarded for the recognition oflocal and foreign people, and receive the preference of its citizens, visitors, tourists when they have to select a place to eat.
La alimentación es una de las necesidades del ser humano. Las formas de preparación, incluida la cocción, han cambiadocon el pasar del tiempo, se va desde la pachamanca, pasando por el fogón de leña hasta llegar en estos tiempos a la cocinade inducción. Sin embargo, en la actualidad los platillos preparados utilizando alguna técnica ancestral son muy apetecidos,entre éstas se puede mencionar la cocción en fogón de leña, horno de leña, utilizando olla de barro o paila de bronce.La provincia de Imbabura, ubicada al norte del país, se caracteriza por la conservación de las tradiciones, entre éstas, lastécnicas de cocción y el uso de utensilios ancestrales. En algunos sitios como Otavalo o Natabuela, en fechas especialesacostumbran realizar la pachamanca. La utilización de estas técnicas y utensilios, han permitido que esta provincia seamerecedora del reconocimiento de propios y extraños, y goce de la preferencia de sus pobladores, visitantes y turistas a lahora de escoger un lugar para su alimentación.
