Influencia de la presi?n en la pasterizaci?n t?rmica de un n?ctar de pi?a, naranjilla y boroj?.

In order to establish the most appropriate heat treatment to preserve the maximum quality attributes of the beverage of pineapple, naranjilla and boroj?, the influence of the pasteurization type (traditional, vacuum) its physicochemical properties and its acceptability were evaluated. The parameters considered were: pH, soluble solids, vitamin C, and instrumental colour. Additionally sensory quality and acceptability were determined. The vacuum pasteurized samples at 65 ?C/12 min showed a 54 % retention of vitamin C content, almost double than the juice pasteurized at the same conditions, in open bath (28 %). The colorimetric parameters brightness (L*), hue (h?) and chroma (C) decreased significantly with open pasteurization. The colour variation of beverage subjected to pasteurization under vacuum at 65 .?C/12 minshowed a ?E = 2.48 ? 1.11, whereas traditional pasteurization at 65 ? C /12 min, showed a ?E = 10.01 ? 0.82. The fruit beverage pasteurized under vacuum at 65 ?C /12 min showed the best global acceptability but other sensory parameters such as taste, odor, colour and sweetness did not follow a definite pattern, obtaining a shelf life of 27 days under refrigeration at 5 ?C.
Con el prop?sito de establecer el tratamiento t?rmico m?s adecuado para preservar al m?ximo los atributos de calidad del n?ctar de pi?a, naranjilla y boroj?, se evalu? la influencia del tipo de pasteurizaci?n (abierta, al vac?o), sobre sus propiedades fisicoqu?micas y su aceptabilidad. Los par?metros considerados fueron: pH, contenido de s?lidos solubles, vitamina C y color instrumental, as? como la calidad sensorial y aceptabilidad. Se observ? que los jugos presentaron una retenci?n de vitamina C del 54 % al ser pasterizados a 65 ?C/ 7 min en condiciones de vac?o, frente al 28 % de retenci?n a la misma temperatura y tiempo, bajo pasterizaci?n abierta. Las caracter?sticas colorim?tricas como luminosidad (L*), tono (h?) y croma (C) disminuyeron significativamente con la pasteurizaci?n abierta. El tratamiento de pasterizaci?n al vac?o a 65 ?C /12 min, present? una variaci?n de color (?E) de 2,48 ? 1,11, mientras que el tratamiento de pasteurizaci?n abierta a 65 ?C / 12 min present? una variaci?n de color de 10,01 ? 0,82. El n?ctar pasteurizado al vac?o a 65 ?C / 12 min present? una mejor aceptabilidad general respecto a los dem?s tratamientos aunque no se apreciaron diferencias significativas en relaci?n al sabor, olor, color o dulzor, ofreciendo un tiempo de vida ?til de 27 d?as a condiciones de refrigeraci?n a 5 ?C
