Los estudiantes siempre buscan nuevas maneras de sobresalir y aplicar los conocimientos impartidos, es por lo que la presente investigación se basa en una propuesta de una unidad de negocio del servicio de catering para la Carrera de Turismo de la Universidad Católica de Santiago de Guayaquil. En el primer capítulo se conoce la línea base para seguir el presente trabajo, teorías como la del modelo de negocio, la del aprender haciendo y la gastronomía elemental son fundamentales en el proyecto. En el capítulo dos y tres, se presentan la metodología de investigación y el estudio de mercado, mediante una muestra de 168 estudiantes de la Carrera de Turismo, se analizó el deseo y necesidad de que la carrera cuente con este programa. Así mismo, el mercado objetivo se mostró interesado en el modelo a desarrollar. Finalmente, en el capítulo cuatro se da a conocer el modelo de negocio a aplicar y la unidad de negocio del servicio de catering propuesto para la Carrera de Turismo.
The students are always looking for new ways to stand out and apply their knowledge, this is why the present investigation is based on a proposal of a business unit of catering service for the Tourism Career from The Catholic University of Santiago de Guayaquil. In the first chapter we know the baseline to follow the present work, theories such as the business model, learning by doing and elemental gastronomy are fundamental in the project. In chapter two and three, the research methodology and the market study are presented, through a sample of 168 students of the Tourism Career, the desire and need for the career to have this program was analyzed. Likewise, the target market showed interest in the model to be developed. Finally, chapter four discusses the business model to be applied and the business unit of the catering service proposed for the Tourism Career.
