This project comprises a brief recompilation of the history of nutrition and gastronomy to highlight the changes and development they have been thru. Nevertheless nutrition inside hospitals in Quito has not suffered significant changes in the last few years. Because of this antecedent it has been determined as an objective to introduce innovative food and decorations alternatives to change the perspective people have about the food in the hospitals of Quito. After a research, which took place in Nueva Clínica Internacional hospital, it has been possible to generate a series of gastronomical alternatives to modernize, in a certain way, and transform the nutrition system used in hospitals. The aim of this project is to give more importance to the food and the nutrition during the recovery time of the patients, because with a more colorful and joyful food it can be shorter.
El proyecto abarca una breve recopilación de la historia de la nutrición y de la gastronomía, para así resaltar los increíbles cambios y avances por los que han pasado. Sin embargo, la alimentación dentro de los hospitales no ha sufrido cambios significativos en los últimos años dentro de la ciudad de Quito. Debido a este antecedente se ha planteado como objetivo el introducir alimentos y decoraciones innovadoras para cambiar el concepto que se tiene de la comida de los hospitales. Tras una investigación de campo realizada en la Nueva Clínica Internacional se ha obtenido como resultado una serie de propuestas gastronómicas para modernizar y transformar la alimentación dentro de los hospitales. Lo que se busca con este proyecto es otorgarle más protagonismo a la alimentación durante la recuperación del paciente, debido a que dicho sustento cumple un papel importante en la evolución del enfermo y con una alimentación mejor presentada, con color y movimiento, ésta podría ser más rápida
