This work was developed in Cayambe Canton Cayambe in the rural parish of Paquiestancia, where a Community Resort operates as a company of collective origin, the same that began its commercial activities in March 2010, it provides services to tourist such as; horseback riding, cultural evenings, traditional food, accommodation and visits to waterfalls located in the area. The project is based on the contribution for the revival of the restaurant that this centre has, for which market studies, business plan, financial plan, marketing plan and the entire legal plan were performed aimed at strengthening this community entrepreneurship. In addition, the project will strengthen the ancestral cuisine, combining the Andean world with the restaurant management by implement the knowledge learned in the University of the Americas and thus support for the proper operation and improvement of profitability and economic sustainability of the restaurant
El presente trabajo se desarrolló en el cantón Cayambe, en la Parroquia rural de Paquiestancia, en donde funciona un Centro Turístico Comunitario, como una empresa de origen colectivo, el mismo que inicia sus actividades comerciales en marzo del 2010. Se dedica a la venta de servicios turísticos como: cabalgatas, noches culturales, comida tradicional, alojamiento y visitas a las cascadas de la zona. El proyecto se fundamenta en la contribución para la reactivación del Restaurante de dicho Centro, para lo cual se realizaron estudios de mercado, plan operativo, plan financiero, plan de marketing y el plan legal todo esto orientado a fortalecer este emprendimiento comunitario. Además el proyecto permitirá fortalecer la gastronomía ancestral, combinando la cosmovisión andina con la gestión del restaurante, implementar los conocimientos aprendidos en la Universidad de las Américas y así apoyar para el adecuado funcionamiento y mejora de la rentabilidad y sostenibilidad económica del restaurante.
