This document is focused on the investigation of the uses and applications of Ecuadorian amaranth in the modern cuisine. Amaranth has been a product ignored by the kitchen because of the use of other products. This product contains a variety of benefits that provides to the consumer. It should also be noted that since it is a pseudocereal, this product can be use anywhere and also being versatile and this can be used to replace recipes since it does not contain gluten. Due to this the research aims to demonstrate the different culinary techniques that can be applied and also execute the production of by-products that provides of a final product. Finally, once the investigation was completed, the result was that the amaranth is a versatile product and that without any inconvenience it can be used with any gastronomic technique; which allowed to prepare any recipe of the modern kitchen.
El presente documento se centró en la investigación de los usos y aplicaciones del amaranto ecuatoriano en la cocina moderna. El amaranto ha sido un producto ignorado por la cocina debido a la utilización de otros productos. Este producto contiene una variedad de beneficios que proporciona al consumidor además se debe resaltar que al ser un seudocereal este permite que su utilización sea versátil y a su vez este se lo puede utilizar para sustituir recetas ya que el mismo no contiene gluten. Debido a esto la investigación tiene como objetivo demostrar las distintas técnicas culinarias que se pueden aplicar y además ejecutar la elaboración de subproductos por medio de un producto final. Finalmente, una vez que la investigación culminó se obtuvo como resultado que el amaranto es un producto versátil y que sin ningún inconveniente este se puede utilizar con cualquier técnica gastronómica; lo cual permitió elaborar recetas de la cocina moderna.
