Ecuadorian cuisine, fundamental part of our history not only for its nutritional richness of products from our land, but also for the tradition of our mothers that generation after generation are exchanged those secrets that are the heritage of the flavor. Today Ecuador is experiencing a period of gastronomic globalization where we see that our ancestral traditions are disappearing by a culture of fast food, high in fat and less nutritive, some even harmful to health. That is why the proposal of our project ''La Hueca de la Costa Norte" aims to rescue our traditions through a journey of flavors and memories by the famous Ecuadorian hollow, as we call to the places for meeting and cultural exchange where we meet with the traditional flavor of our coastal towns of Esmeraldas and Manabi.
La gastronomía ecuatoriana, parte fundamental en nuestra historia no solo por su riqueza nutricional en productos provenientes de nuestra tierra, sino también por la tradición de nuestras madres que generación tras generación se van intercambiando aquellos secretos que son: la herencia del sabor. Hoy en día el Ecuador vive una etapa de globalización gastronómica en donde vemos que nuestras tradiciones ancestrales van desapareciendo por una cultura de comida rápida, altas en grasa y poco nutritivas, algunas inclusive nocivas para la salud. Es por eso que la propuesta de nuestro proyecto “La Hueca de la Costa Norte” tiene como objetivo rescatar nuestras tradiciones por medio de un recorrido de sabores y recuerdos por las famosas huecas ecuatorianas, como criollamente llamamos a los espacios de encuentro e intercambio cultural, en donde nos reencontramos con la sazón tradicional de nuestros pueblos costeros de Esmeraldas y Manabí.
