The study of gastronomy throughout history helps us understand the link between human beings and the way we get nutrition from natural foods that we find in our environment. This is the way our culinary habits have been born and developed in every region of the world. People have learned how to prepare, cook and eat the foot that was available to them. Therefore, gastronomy has giving each country its own identity by using the food that was available to them for human consumption. My menu is based on the research that I have done involving four typical dishes from the city of Guayaquil which will be presented in an elegant fashion to emphasize the gastronomy identity from this coastal region of Ecuador. The gastronomy from this port city has been influenced throughout history by people that have traveled here provinces of our country. This has created a unique cuisine for Guayaquil. The purpose of this thesis is to show the readers, in a stylized way a wonderful piece of Guayaquil´s gastronomy while respecting the conservative recipes with traditional cooking.
A lo largo de la historia, la gastronomía nos ha permitido estudiar el vínculo del hombre entre su alimentación y su entorno natural. De esta manera nacen las costumbres culinarias que han ido desarrollando aquellos nativos de cada región del mundo del cómo preparar y comer sus alimentos. La gastronomía denota una identidad propia de cada país presentando así la mejor manera de aprovechar los alimentos para el consumo humano. El menú que se presenta en este trabajo de investigación es una propuesta en donde se plantea la elaboración de cuatro diferentes platos típicos de la ciudad de Guayaquil en estilo gourmet y en razón de resaltar la identidad gastronómica de esta región del Ecuador. La gastronomía de esta ciudad portuaria ha recibido a lo largo de la historia diferentes aportes culinarios de personas provenientes de varias provincias del Ecuador quienes se han erradicado en la provincia del Guayas habiendo formado así la identidad culinaria de esta ciudad. Esta tesis tiene como razón de ser el presentar a sus lectores un pedazo de la maravillosa gastronomía Guayaquileña en estilo y presentación gourmet conservando las recetas y elaboraciones tradicionales.
